Broccoli Cheese Star Crackers

INGREDIENTS

VEGETABLES

50g broccoli, steamed, very finely chopped and squeezed dry

DAIRY

70g cheddar cheese, shredded

OTHER

40g oat flour

40g all-purpose flour

1 egg yolk

5g olive oil (about 1 teaspoon)

Onion powder, to taste

Paprika, to taste

Nutritional yeast, optional (great if you'd like to use a little less cheese while still keeping that cheesy flavour)

DIRECTIONS

Preheat your oven to 175°C / 350°F and line a baking tray with parchment paper.

PREP

Steam the broccoli until tender. Once cool enough to handle, squeeze out as much moisture as possible and chop very finely.

In a large bowl, combine the oat flour, all-purpose flour, shredded cheddar, onion powder and paprika.

Add the egg yolk and chopped broccoli.

Pour in the olive oil and use your hands to gently bring the mixture together into a dough.

HOT TIP!! Grate in cold butter instead of adding softened butter. It distributes evenly throughout the dough and means you can often skip the chilling time if you're in a hurry.

Once the dough is fully combined, place it in the fridge for about 30 minutes.

SHAPE

Roll the dough out to roughly ¼ inch thick.

Using a cute cookie cutter, cut out your shapes (I used stars!).

Transfer the crackers to your prepared baking tray.

BAKE

Bake for 12–15 minutes, or until the edges are lightly golden.

Allow the crackers to cool for a few minutes—they'll crisp up slightly as they cool.

ENJOY

Serve immediately or refrigerate dough for a few hours or freeze dough for later use.
